When I quit work to stay home a little over 5 years ago, I stopped buying cereal. Not completely stopped forever, but it is at a very minimum. Why?
- I have more time to prepare breakfast. Not necessarily in the morning because sleep wins, but I do have time to prepare ahead.
- I didn’t like the ingredient list. But, hello tax season!
- Cereal is expensive, which is only multiplied by the fact that the husband and the kids can eat a box of cereal in record time.
With back to school just around the corner, I’ve been scheming our game plan for the crazy mornings that are surely coming. The first plan of attack is get some breakfast choices in the freezer for quick prep. I’ll carve out a couple of hours, triple or quadruple several of these recipes, and throw them in the freezer bags. In the mornings, 30 seconds in the microwave, add a banana or a side of berries and hello breakfast.
Here are a few of our kid approved favorites.
–Banana Bread Muffins – This recipe is for a loaf, I cut the baking time to 20-25 minutes, or until a toothpick comes out clean.
–Fluffy Pancakes – the kids like when I add blueberries or chocolate chips. To freeze, I cut squares of freezer paper to place in between the pancakes, so they don’t stick together in the freezer.
–Greek Yogurt Double Chocolate Muffins
–Peanut Butter Banana Oatmeal Muffins
–Pumpkin Chocolate Chip Muffins
I use a medium sized cookie scooper for my muffins. This keeps the muffins a little smaller, but I’m okay with that. They turn out the perfect size for my toddler that barely eats, and doesn’t seem excessive if my big kids want three.
I’ve been known to toss a frozen muffin in their lunches, disguised as dessert. It defrosts by lunch, and gives them a little sweet after their lunch.
