Sound familiar??!

Honestly, I resisted joining the Instant Pot Lovers Community. Like really resisted. For like a year. I didn’t need another ridiculous kitchen appliance in my life. Plus I’m not really a one-pot meal mom.

But then my rice maker started its downhill journey.

I started researching a new one. I kept coming back to the Instant Pot. Obviously more money (and functionality) than a simple, cheap replacement for my rice maker. But it does all the things. I mean ALL.THE.THINGS. I have an 8 quart 7-in-1, but there are 6-in-1 and even 10-in-1 models also.

The more reviews I read, it was obvious that everyone was in love with their Instant Pot. Pinterest is full of recipes for it. So many, it is super overwhelming. 

I had to cut through all of the heart eyes and look beyond all of these fancy recipes and figure out IF the Instant Pot was going to help me. I ultimately decided yes, it would save me time and probably energy. It was worth a try anyway.

I was not prepared for how much time and energy it has actually saved.

As of today, I have had my Instant Pot for 20 days and I have lost count of how many times I’ve used it. It has been a huge help to our family. And I’ve yet to have a fail, so I’m calling that a win!

If you have one of these magic pots, as my 9-year-old calls it, taking up space in your closet, go ahead and pull it out, make these four things today. You probably already have everything you need!

ONE: Chicken Breasts (for shredding or slicing)

1/2 cup water on the bottom of your pot liner. Place trivet in the pot. Place frozen chicken breast on the trivet. Seal your pot lid. Press the manual button (or pressure if you don’t have a manual button), and increase the time until it reaches 8 minutes (breasts from frozen: change cook time to 12 minutes). Allow to fully release the pressure manually (about 10-15 minutes).
Easy right?! Beautifully tender and yummy chicken! This is probably my favorite thing to do! I love having shredded chicken in the fridge to pull out for just about everything!

TWO: Baked Potatoes

1/2 cup water on the bottom of your pot liner. Place trivet in the pot. Place potatoes on the trivet. Seal your pot lid. Press the manual button (or pressure if you don’t have a manual button), and increase the time until it reaches 10 minutes.

THREE: Ground Beef

This works best from frozen. 1/2 cup water on the bottom of your pot liner. Place trivet in the pot. Place frozen ground beef on the trivet. Seal your pot lid. Press the manual button (or pressure if you don’t have a manual button), and increase the time until it reaches 25 minutes. Remove meat from the pot, and gently pull apart with an angled spoon. (Ignore all the fat that drained off, that your ground beef did not cook in!) Hello, tacos, lasagna, or sloppy joe!

FOUR: Oatmeal

Add 2 1/4 cup of water and 1 cup oats to your pot liner. Give it a quick stir. Seal your pot lid. Press the manual button (or pressure if you don’t have a manual button), and increase the time until it reaches 5 minutes. I add butter and brown sugar, but you can skip that and add your favorite add-ins after your oatmeal cooks.
It seriously could not be easier to have success with the Instant Pot. Simple is best, right?
