mallow7A few years ago while bouncing around the internet, I learned an amazing secret. Since then, whenever I share this secret with other people, it always leads to a conversation in which the person I am talking to is insanely impressed with me. “How is it possible?” “How did you even think to do that?” “Isn’t it insanely hard?” The truth is this. Ladies and gentlemen, it is totally possible for you to make your own marshmallows. You can make them in any color of flavor you can think of. Simply telling people you know how to make marshmallows is enough to melt people’s minds. Actually making them allows for delicious marshmallow goodness to melt in the mouths of friends and loved ones. Here is the stuff you need for a batch of Marshmallows 3 envelopes of unflavored gelatin (1/4th oz each) ½ cup cold water 2 cups of sugar 2/3 cup of light corn syrup ¼ cup of water ¼ teaspoon of salt 1 tablespoon vanilla extract Powdered sugar Flavoring agents of your choice (we’ll get to that) marshmellowmadness1. In an electric mixer bowl, add the three packets of gelatin with the ½ cup of cold water. Let this sit in the bowl for a while and move on to the next step. 2. Combine the sugar, corn syrup, and ¼ cup of water in a sauce pan. Bring this to a ‘hard boil’ (big bubbles) and boil it like this for a full minute. 3. Pour the boiling syrup into the gelatin mix, and immediately start mixing everything at high speed. 4. Add the salt and just let the whole thing beat for about 12 minutes. 5. While beating, add your vanilla into the mixture. (This makes standard marshmallows.) Add food coloring at this time as well. 6. While beating, you are going to take a square baking pan, line the whole thing with plastic wrap that you have oiled (PAM is okay) 7. Scrape the mixed fluff into the pan, and cover with another sheet of oiled plastic wrap. 8. Let the whole thing cool, stick in the fridge for a bit. Once it is cooled, you can pull it out of the fridge. Rub the whole thing down with powdered sugar. Use kitchen scissors to cut the marshmallows into smaller chunks, giving each side a rub of the powered sugar.

Let’s talk about FLAVORING!!!

There are a variety of things you can use to flavor your marshmallows. This is a great time to play around and experiment, but here are a few tried and true ways to get the results you want! Orange: Instead of adding just vanilla, add ½ tablespoon of vanilla, ½ tablespoon of orange extract. (You can use just about any extract flavoring this way.) Peppermint: Instead of adding just vanilla, add three teaspoons vanilla extract and 1 teaspoon of peppermint extract. (Go easy as peppermint extract is STRONG!) Lemon: Instead of soaking the gelatin in water at the beginning, use a half cup of lemon juice.

Other Variations

The S’more: After cutting your marshmallows into pieces, you can drizzle them with melted chocolate and crumbled graham crackers. Marshmallow Fluff: After mixing and beating the ingredients, scoop into a container and leave at room temperature. You can use it exactly the same way you do marshmallow fluff.
