Farmers Market Corn Salad

corn saladThis delicious, fresh summer salad was a crowd-pleaser with our family! The local corn at this time of year is sweet and delicious, the tomatoes are juicy and full of flavor, and the cucumbers are refreshing and crunchy. Toss it all together with a fresh lime juice dressing and you have a quick and healthy picnic or grill-out favorite. Experiment with changing up the produce, too! If you don’t have a cucumber, use a zucchini or yellow summer squash. If you don’t have a red pepper, use a green or yellow pepper, or even some diced carrots. Be creative!

Ingredients:

6-7 ears corn, cut kernels off
3 large tomatoes, diced
1 red pepper, diced
1 English cucumber, diced
1/2 red onion, diced
2 T cilantro, minced

Dressing:
2 limes, juiced (1/4 cup)
2 T olive oil
4 cloves fresh garlic, minced or pressed
1 tsp honey
salt and pepper to taste
pinch of cayenne (optional)

Toss dressing ingredients together. Marinate red onion in dressing while you dice all of your other vegetables.

Dice other vegetables and place in a large salad bowl.

Toss with marinated onions and dressing.

Chill for at least an hour and serve.
