Easy, 10 Minute, One-Pot Chicken & Rice Casserole

ChickenCasseroleIf you are like me, then dinner is sometimes the last thing on your mind.  After a busy day of shuffling kids around all over town, dinner is sometimes overlooked.  Instead, the kids are eating cereal or a microwavable meal.  A New Years Resolution of mine was to make dinner more of a priority.  I decided not only to make a meal plan for the week ahead of time but to make it a point for us to sit down around the table together as a family.  My goal was to come up with some easy to fix meals that were sure to please everyone.  Knowing that between practices and other activities, some nights were are rushing in and out of the door, I wanted to find a few quick prep pantry meals that wouldn’t involve a lot of time spent prepping food.

One of the easiest meals that I came up with was this One Pot Chicken and Rice Casserole.

INGREDIENTS:

1 Large Can Shredded Chicken or (shred some leftover chicken breasts)

1 Can Cream of Celery Soup

1 Can Milk (use soup can)

2 Cans Minute Rice (use soup can)

DIRECTIONS:

1.  Combine milk and soup in pan until low boil

2. Add chicken, then rice take off heat

3. Let sit 10 minutes

4. Sprinkle with cheese and soy sauce

5. Serve & Enjoy

Everyone in my family likes this which is hard to believe!  I serve it with a vegetable and not one person complains! This is the perfect one pot dinner for those busy nights when you still hope to get a meal on the table!
