Three Quick and Easy Snacks

0

SnacksIt’s that time of year again. The temperatures are warming up, the sun is (sometimes) shining, Girl Scout cookies are in the house [okay, at least my house], and Facebook keeps reminding me that summer bodies are made in the winter and spring. If you’re like me, you may be looking for a few healthy, but easy snacks to ensure that you don’t eat an entire package of Thin Mints or bag of chips during your child’s nap. Maybe you have way more self control than me and are just looking for something new and tasty. Look no further, here are Three Quick and Easy Snacks that are both satisfying and healthy and can be made in under three minutes.

Added bonus: These are “grown-up” enough that you can share them with company.

Crackers with Cream Cheese and Pepper Jelly

Ingredients
Crackers (Anything you have in pantry will work, but I love Wheat Thins with this.)
Cream Cheese
Pepper Jelly

Directions: Put desired amount of cream cheese on plate. Top with pepper jelly. Enjoy with crackers.

Party Trick: This is an awesome (super easy) dish to take to a party. Just assemble cream cheese and pepper jelly and surround on a serving plate with crackers.  If you really want people to think you went above and beyond, use a cookie cutter to shape the cream cheese into something seasonal like a flower, pumpkin, or Christmas tree.

Avocados with Balsamic

Ingredients
Avocado
Balsamic Vinegar
Pepper

Directions: Halve avocado and remove from peel. Drizzle with balsamic vinegar (or your favorite vinaigrette salad dressing). Sprinkle with pepper.

Tip: This is also a great dinner side dish. I love to pair it with BBQ chicken or salmon, but it truly works great with anything grilled.

Strawberry Banana Smoothie

Ingredients
Handful of Strawberries
1 cup of Milk
1 Yogurt
1/2 Banana
Handful of Ice

Directions: Wash strawberries and remove stem. Throw all contents in blender. Blend until it is pink and creamy.

I am a Cincinnati transplant. My husband and I moved here last October from Washington, D.C., where I was an Early Childhood teacher, instructional coach, and most recently principal at a charter school. I’m now a mom to a precious 8-month-old boy and a dramatic 2-year-old golden retriever. I am passionate about education and love spending time with family, reading, walking/ hiking, Pure Barre, taking pictures, discovering new restaurants, fantasy football, and “quick” trips to Target! I’m excited to start exploring all that Cincinnati has to offer a family and to share my journey into motherhood (and undoubtedly some first-time parent laughs) with you!
